How to make (you need at least three burners!)
Boil 3-4 cups of water (or beef broth if you want, it's not really needed), and add 3/4 cup each lentils and brown rice to it. Lower the heat and simmer.
Make you sauce, you'll need:
one 6-ounce can of tomato paste
3 cups of tomato juice or V-8
one Tablespoon sugar
1 teaspoon cumin
1/2 tea. salt
cayenne pepper to taste
Mix this well and simmer for 20 minutes.
Start the onions.
Slice three onions thinly, and mince four cloves of garlic. Add to a large pan with a little oil at the bottom and cook, stirring every now and then. When the onions are all brown and gooshy, they are ready. If you time it well, everything should be done around the same time. Serve by putting the lentils and rice in a bowl, adding the sauce, and topping with the onions. It makes a good lunch.
