So far, the best thing I've fixed from the charity box food is the pork filet. I cubed it, marinated it in a mixture of lime juice, garlic, onion, oil (just a tablespoon), chili powder, cumin, red pepper, and oregeno, and after a few hours, roasted it for about 45 minutes. This made lovely Mexican style pork bits that I used for burritos for a couple of days. It was delicious.

I still have plenty left over from this box, and the new one comes in a week. Just now I took two of the 8oz hamburger steaks and made nests, which is basically putting the hamburgers on a foil covered cookie sheet and covering them with this mix of veggies:

One large chopped onion
Two chopped carrots
One chopped potato
salt and pepper
worchestershire sauce
hunk of cheese (cheddar or gouda)

Bake this at 400 degrees for 45 minutes to an hour, until the veggies are done and the meat cooked through. Serve with ketchup.

The other thing I made this week was a pot of bean soup, from a mixed bean package from the Angel food people. I put a cup of the beans in my slow cooker with some beef bullion cubes and let that cook on low most of the day. When I came home, I chopped an onion, cubed a potato, minced two cloves of garlic, and chopped four hot dogs. I sauteed all that for about ten minutes, then added the beans and broth. It was seasoned with salt, pepper, and savory (which is fantastic with beans). It's a very good humble meal, like my mom's beans and franks but less sweet.
